This yeast has the exceptional ability to succeed in difficult fermentation conditions and at lower temperatures. The secondary fermentation, the step that allows a base wine to become “sparkling,” requires the preparation of a yeast starter, which is traditionally a three-day process. It can be shortened with this strain to 36 hours with a new one-step process yeast starter. SafŒno™ SPK 05 produces a fresh and elegant nose, fine bubbles and a balanced finish in all types of sparkling wines, including Champagne, Prosecco, Cava, Crémant, and more.
