In the keynote speech given at Enoforum 2022, Antonio Morata talked about emerging non-thermal technologies applied to oenology and their impact on the extraction of phenolic compounds from grapes, the elimination of indigenous microorganisms, and their effect on reducing the use of SO2.
These technologies are physical processes with no or low impact on temperature and therefore have no effect on the sensory quality of the grapes. This video provides a review of the interesting advantages and possible drawbacks, focusing in particular on the potential applications of the following technologies:
High hydrostatic pressure (HHP),
Ultra High Pressure Homogenisation (UHPH),
Pulsed Electric Fields (PEF),
Electron beam irradiation (eBeam),
Ultrasound (US)
