  • Reactivation of basic functionalities of oak barrels through regeneration
Barrel ageing is a complex process involving wood-wine interactions, oxygen exposure, and gradual depletion of barrel properties. Antonio Palacios’ study discusses the effects of barrel regeneration on aroma and sensory qualities in French and American barrels.
  • The chemical and sensory bases of the wine minerality
The term “minerality” emerged in the 1980s, with debates on its scientific validity. Antonio Palacios’ research, presented at Enoforum 2017, explores the correlation between sensory attributes and wine’s chemical composition, identifying factors that influence the perception of minerality.
