The quality of musts extracted by membrane presses relies on their using conditions. The pressman has at his disposal only quantitative data to adapt the running of those presses. We have been looking for a qualitative captor allowing the optimisation of the pressing. Monitoring numerous pressing cycles lead to the validation of the conductivity as an interesting qualitative captor. It gives continuous information on the real evolution of the characteristics of the extracted musts to the user and makes the difference between several qualities. In case of fractional pressing, the obtained wines have different qualities. This tool permits to analyse the press running from a qualitative point of view in order to optimize it.
