Most recent advances in sparkling wine production

Sparkling wine plays a significant role in the market for wine whose export increased in 2022, both in terms of value and volume, and Italy has the lead in exports on a global scale. Given the importance of this type of product, the seminar will focus on the most recent research regarding its production, including investigations still in progress. Emphasis will be placed on the stages of the process that are peculiar and require greater control, including pressing, secondary fermentation in the bottle, aging on yeast lees and disgorging. Insights and ideas aimed at further implementing the quality of Italian sparkling wine will be provided.
