The future of winemaking: the role of scientific research

Luigi Moio initially traces the scientifc and diplomatic history of the OIV, the world's scientific reference on the entire supply chain, from the moment it all began: in 1874 with the arrival of phylloxera. He raises several questions: what is the logical future of wine, rooted in science? In what direction should we go? What is the strategy?
Starting with the reflection that we need to understand what happened in the past (how wine was born, who made it first, how the "mystery" of alcoholic fermentation was unraveled), to understand how wine progressed to today, then understand the present (what is modern wine) to get to the future of the vineyard and the wine of tomorrow, in light of climate change, sustainability, economic uncertainties, rising energy and material costs, and the transparency demanded by the consumer.
