Experts in sensory analysis from the Medicine University of Dresden, Germany, wanted to check an assertion which is obvious for many wine lovers, saying that the shape of glass has an influence on the flavour of wines. They carried out tasting with 181 healthy untrained subjects (96 women and 85 men, age ranking between 19 and 73). Wines were poured in different glasses. The subjects compared three white wines and three red wines, in differently shaped glasses, though with same height and diameter. They had to appraise the intensity, perceived flavours and overall quality of the wines before and after mouth tasting. From their study, the authors affirmed that the olfactive perceptions of the wine were influenced by the shape of glasses, independently of the visual impression on the taster. Thus, this work supports the hypothesis affirming that indeed, the shape of glass appears to influence the perception of wine flavours. We advise you to read the entire article.
