At Enoforum 2023, the preliminary results of the D wines project – Diversity of Italian White Wines – “Knowing and Enhancing the Identity and Diversity of Italian White Wines,” a project that involved the collaboration of no less than seven universities: Verona, Turin, Padua, Trento, Bologna, the Federico II of Naples and the Edmund Mach Foundation of San Michele all’Adige, were presented.
Recordings of the conference that closed Enoforum 2023’s proceedings on May 18 will all be available in our video section, in this second video Susana Rio Segade of the University of Turin tells us about the role of fermentation volatile compounds and color characteristics in the differentiation of Italian monovarietal white wines, followed by Maurizio Ugliano of the University of Verona speaking again to discuss the evolution of the varietal aromatic profile of Italian whites during bottle aging. Matteo Marangon, University of Padua, closes the second session with a presentation on the effect of bentonite treatment on the composition of white wines.
