On the occasion of Enoforum 2023, the preliminary results of the project D wines – Diversity of Italian White Wines – “Knowing and Enhancing Identity and Diversity of Italian White Wines” were presented, a project that saw the collaboration of no less than seven universities: Verona, Turin, Padua, Trento, Bologna, the Federico II of Naples and the Edmund Mach Foundation of San Michele all’Adige.

Recordings of the conference that closed the May 18 proceedings of Enoforum 2023 will all be available in our video section. in this first video Maurizio Ugliano of the University of Verona presents the project, followed by the speeches of the first macro-theme: The varietal compositional characters of Italian white wines.

Fulvio Mattivi, University of Trento describes the contribution of aromatic sulfur compounds, while Silvia Carlin, Edmund Mach Foundation focuses on methyl salicylate, as a marker of varietal and geographical identity. This is followed by Giovanni Luzzini, University of Verona, talking about terpenes and norisoprenoids in Italian white wines, and finally Matteo Marangon, University of Padua talks about the macromolecular composition of Italian whites.
