Waste waters originating from small wineries have polluting characteristics, which are similar to large plants, except for the volumes to be treated and stronger seasonal variations. Thus, the traditional winery waste water treatment techniques – such as the spreading on agricultural surfaces, aerobic biological treatment and connection to collective waste water treatment systems – can be adapted to a small scale in a slightly different administrative and regulatory context compared with the one required for plants classified as environmental protection installations.
