Diversity and the sensorial identity of white wines

At Enoforum 2023, the preliminary results of the D wines project - Diversity of Italian White Wines - "Knowing and Enhancing the Identity and Diversity of Italian White Wines," a project that involved the collaboration of no less than seven universities: Verona, Turin, Padua, Trento, Bologna, the Federico II of Naples and the Edmund Mach Foundation of San Michele all'Adige, were presented.

Recordings of the conference that closed Enoforum 2023's proceedings on May 18 will all be available in our video section, in this third and last video, Paola Piombino of the University of Naples describes how they came up with the sensory profiles of the wines of the analyzed appellations. 29 olfactory descriptors, 7 gustatory descriptors and quantitative descriptive analysis of the aromatic and gustatory profiles of the 18 single-varietal wines studied were identified. 

Three clusters were defined thanks to the statistically analyzed data: at the apex of each of which Müller Thurgau, Gewürtztraminer and Albana. For each wine it was then possible to create models, each visualized with a sensory wheel, including not only the terms best suited to describe it but also those for which that same wine is different from others.
