In the current market yeast producers are required not only professionalism, but also a high degree of dedication, research and investment.

The following videos show the method developed and adopted by the company Ever in order to guarantee its customers a rigorous and absolute quality through the control of the entire yeast production chain.

Paolo Antoniali illustrates in his presentation a Supply Chain Management model, which consists of all the activities that aim to guarantee the quality of a specific good throughout the production process and he uses yeast as an example.

In this management model one of the fundamental phases is the definition of the control parameters for the yeast. In order to do this a system of molecular analysis of the yeast was created by the team of Raffaele Lopreiato, of the University of Padova. This system aims to organize the yeast strains managed by, Italiana Biotecnologie and also suppliers involved in yeast strain production.

By identifying the strains using comparative analysis of the InterDelta profile of the genome DNA, it was possible to complete a first phase towards a systematic genotyping of the yeast strains. This method was used for the molecular identification of the raw materials and to control the quality of the final product.
