Biogenic amines and grapes: effect of microbes and fining agents

GROSSMANN, M., SMIT, I., LOEHNERTZ, O. ANSORGE, A.; Geisenheim Research Center, Geisenheim (Germany)

Biogenic amines are believed to cause allergy-like reactions in sensitive people after uptake. In this study, the focus was laid on the content of biogenic amines in grapes produced under different conditions and it was also investigated how fining agents might lower the concentration of amines in the resulting wines. Presented at International Symposium Microsafetywine, Vilafranca del Penedés, Spain, 20-21 November 2007
