More than 700 professionals from the wine sector gathered in Zaragoza to take part in Enoforum 2026, a congress that, in its fifth Spanish edition, once again demonstrated its ability to connect scientific knowledge, technological innovation and professional practice.
Over two intensive days, held on 20 and 21 May at Feria de Zaragoza, the congress brought together some of the leading national and international figures in viticulture and enology, offering a high-level programme focused on the major current challenges facing the sector: sustainability, digitalisation, adaptation to climate change, vineyard management, new enological tools, technological innovation, sensory quality and the valorisation of terroir.
The 2026 edition stood out for the breadth and depth of its programme, with more than 20 keynote speakers, over 70 speakers, more than 90 scientific papers and advances from 5 countries, as well as the presentation of 7 R&D&I projects. This was complemented by the participation of 45 companies, which presented their latest innovations through technical presentations, demonstrations, posters and direct meetings with the professionals in attendance, along with 10 tastings of wines produced using innovative technologies and solutions.
One of the key distinguishing features of this edition was the introduction of a new viticulture room, specifically dedicated to the current challenges facing vineyards. This new space made it possible to address highly topical issues such as soil management, water stress, efficiency in the use of water and energy, pathogen control in organic viticulture, automation, applied sensor technology and adaptation strategies for increasingly demanding climate scenarios.
The quantity and quality of the enological content addressed once again reflected the complexity and rapid evolution of the sector. Among the topics covered were pH and freshness management, the production of wines with lower alcohol content, enological adjustments in dealcoholised wines, oxygen control, the optimisation of pressing and ageing, innovations in sparkling wine production, applications of pulsed electric fields, the selective reduction of undesirable compounds, bioprotection as an alternative to SO₂ and the valorisation of fermentation CO₂, among many other aspects of technical interest.
The scientific and institutional dimension of Enoforum 2026 was strengthened by the high patronage of the OIV (International Organisation of Vine and Wine), as well as by an important network of collaborations with leading organisations such as GIENOL (Enological Research Groups), Oenoviti International, the SECH Viticulture Group, the ICVV (Institute of Vine and Wine Sciences) and IVES (International Viticulture and Enology Society).
Likewise, the collaboration with the PTV (Wine Technology Platform) helped to reinforce the applied nature of the congress, particularly in the field of digitalisation and the transfer of R&D&I to the productive sector. In addition, the support of ENOMAQ and the main Spanish associations of enologists once again highlighted the strong involvement of the professional sector in the development and consolidation of Enoforum as a leading technical meeting point.
Enoforum 2026 also highlighted the link between innovation, territory and agri-food heritage thanks to its collaboration with Aragón Alimentos – “Aragón, sabor de verdad”. This partnership allowed attendees to discover the wine-growing and agri-food richness of Aragón through specific activities, including a technical tasting of experimental wines made from minority grape varieties and a tasting of products representative of the region.
The tasting room was once again one of the spaces most appreciated by attendees, as it allowed the direct sensory evaluation of wines produced using emerging technologies, new winemaking strategies and innovative solutions. At the same time, the exhibition area and poster gallery facilitated technical exchange among researchers, enologists, winegrowers, technology providers and winery managers.
Enoforum once again confirmed its ability to connect science and industry, transforming research advances into solutions applicable to the real challenges faced by wineries and vineyards. The high level of participation, the quality of the content and the presence of international researchers, leading companies, professional associations and institutional organisations reinforce its role as a leading technical meeting point for the entire wine sector.
Enoforum 2026 was organised by Vinidea, SIVE and Laboratorios Excell Ibérica. The edition also benefited from the collaboration of leading scientific, technical and institutional organisations, as well as the support of key companies and associations from the wine sector.
